For the month of August, we are showcasing aromatic dishes featuring ingredients and spices from the Chettinad province in the southern Indian state of Tamil Nadu. A region famous for its fragrant cuisine, the flavours evokes the warmth and generosity of the area's hospitable community.
The special Chettinad menu has been created by our Sous Chef - Sankar Chandrasekaren who was born in the industrial city of Salem to a Chettir family where he soon developed an interest in cooking. After completing a three year diploma course in hotel management, he worked at The Residency in Coimbatore for four years and later at the GRT Grand hotel in Chennai.
The special menu is available for £50 per person from 30th July - 1st September 2012 for both Lunch and Dinner
